Marry Me Chicken Soup

Careful—this Marry Me Chicken Soup has a reputation. It’s creamy, comforting, and known to make people say, “I’d marry whoever made this!”
Now I taste tested as I went and added a little more of what I think it needed. Take your time with this soup and put a little love in it.
Here is what you need:
2 chicken breasts
2 garlic cloves, minced
1 onion
2 1/2 boxes of chicken broth
1 box mini bowtie pasta or orzo
3 tbsp of tomato paste
3-4 cups of spinach
3 tbsp of sun-dried tomatoes
1/2 cup heavy cream
4 slices of cooked bacon, chopped
1 tbsp Italian seasoning
1 tbsp red pepper flakes
1-2 tsp butter
- In a large pot, sauté in butter the onion, garlic, red pepper, Italian seasonings, bacon and a 1/2 cup of chicken broth and tomato paste
- Add in chicken breast and rest of chicken broth. Boil for 45 minutes to 1 hour.
- Remove chicken from broth and chop or shred. Add back to the broth.
- Chop spinach and add to soup along with the sun dried tomatoes. Bring back to a boil for 10 minutes.
- Finally turn down heat to low and add heavy cream.

Stir and taste. Add salt and pepper to taste.
Serve with grilled cheese or cheese quesadillas or Texas toast.
