Marry Me Chicken Soup

 

Careful—this Marry Me Chicken Soup has a reputation. It’s creamy, comforting, and known to make people say, “I’d marry whoever made this!”

Now I taste tested as I went and added a little more of what I think it needed. Take your time with this soup and put a little love in it. 

Here is what you need:

2 chicken breasts

2 garlic cloves, minced

1 onion

2 1/2 boxes of chicken broth

1 box mini bowtie pasta or orzo 

3 tbsp of tomato paste 

3-4 cups of spinach

3 tbsp of sun-dried tomatoes 

1/2 cup heavy cream 

4 slices of cooked bacon, chopped

1 tbsp Italian seasoning 

1 tbsp red pepper flakes

1-2 tsp butter 

  1. In a large pot, sauté in butter the onion, garlic, red pepper, Italian seasonings, bacon and a 1/2 cup of chicken broth and tomato paste
  2. Add in chicken breast and rest of chicken broth. Boil for 45 minutes to 1 hour.
  3. Remove chicken from broth and chop or shred. Add back to the broth. 
  4. Chop spinach and add to soup along with the sun dried tomatoes. Bring back to a boil for 10 minutes. 
  5. Finally turn down heat to low and add heavy cream.
  6. Stir and taste. Add salt and pepper to taste. 
    Serve with grilled cheese or cheese quesadillas or Texas toast.
